~Fresh juicy strawberries topped with a buttery crumbly oat topping makes an excellent summer dessert especially when served with vanilla ice cream and/or topped ~with whipped cream.
~Prep Time: 10 minutes. Cook Time: 35 minutes. Servings: 8.
~Ingredients:
~5 heaping cups fresh strawberries, washed, hulled and quartered ~1/4 cup granulated white sugar ~1 teaspoon vanilla extract ~3 Tablespoons cornstarch ~Topping: ~1 cup all purpose flour ~3/4 cup old fashioned oats ~2/3 cup granulated white sugar ~2/3 cup packed brown sugar ~1/2 teaspoon salt ~3/4 teaspoon cinnamon ~1/2 cup melted butter, (1 stick)
~Instructions:
~Preheat the oven to 350 degrees. Grease a deep dish pie plate or a large baking dish, (8"X8"), with butter or cooking spray and set aside.
~Combine the chopped strawberries and sugar in a large bowl and mix until strawberries are fully coated with the sugar. Add the cornstarch and vanilla extract and ~again stir until the strawberries are evenly coated. Pour into prepared baking dish and even out.
~For the topping, combine the flour, oats, brown sugar, granulated white sugar salt and cinnamon. Mix well. Pour melted butter over and again mix well until coated ~and crumbly. Sprinkle this mixture evenly over the strawberries.
~Bake in the preheated oven for 35 to 40 minutes until fruit is bubbly and topping is golden brown. Allow to cool slightly before serving. Serve with valilla ice cream ~and/or whipped cream. ENJOY!
