2 lbs. Haddock fillets.
1/4 tsp. pepper and 1/8 tsp. salt (or to taste).
3 Tablespoons melted unsalted butter.
1/2 tsp. lemon juice.
2 garlic cloves minced.
1/2 tsp. dried parsley flakes
3/4 tsp. dried tarragon flakes.
1/2 tsp. paprika.
Preheat oven to 350 degrees. Lightly grease/spray a large shallow baking dish. Rinse fillets and pat dry. Season both sides of fillets with salt and pepper. Place fillets in prepared baking dish. Mix melt butter, lemon juice and garlic together and evenly brush over fillets. Sprinkle fillets with parsley, tarragon and paprika. Bake for 25 to 35 minutes until fillets are opaque and flakes easily. Enjoy.
** This recipe will work well with just about any fish fillets. Cooking time will depend on thickness of fillets. Spices listed above could be replaced with similar amount of Old Bay seafood spice.
