This year as it was just the two of us, we decided to scale down on the usual Thanksgiving Feast that we have always spent many hours preparing and then spend the next week trying to eat up the leftovers. By the time that week is over, we are very happy that Thanksgiving and cooking a turkey only happens once a year. Having said all of that, we decided to cook just a turkey breast and to prepare only the mandatory vegetables, and condiments such as rutabagas, cranberry sauce, etc., and naturally, a pumpkin pie for dessert.
The next thing was to find a recipe to follow. After searching out several possible recipes, we cobbled one together using bits and pieces from several of the recipes we looked through and the results were that we ended up with one of the tastiest and most moist pieces of breast that we have ever had and because of that, we will be eating turkey breasts a wee bit more during the year. The recipe we came up with and used is posted below. Enjoy!
If you decide that you want to do a whole turkey for Thanksgiving, the best one we ever had was a fresh turkey pre-ordered and picked up at Wholesome Foods. They only have them for Thanksgiving and you do have to order them ahead of time and yes, they are a little more expensive than what Walmart or Food Lion sells but they are well worth the extra money
