Hoppin' John is supposed to be made around and eaten on New Year's Day for "Good Luck".         I, (we), have tried several different recipes for this dish and even though the "good luck" part   hasn't really jumped out at us, this is our favorite version of this dish and we like it so much that   we do prepare it several times during the year.  Anyway, here it is and if you try it, we hope that   you will enjoy it too.
