Chicken Ranch Macaroni & Cheese Casserole
Ingredients:
2 cups cooked elbow macaroni. 1lb. chicken which has been chopped into medium sized pieces. 1 cup Ranch Dressing. 1/2 cup milk. 2 cups shredded extra sharp cheddar cheese. 1/2 cup shredded Parmesan cheese. 1/4 cup seasoned Panko bread crumbs. 1 tsp. garlic powder. 1/2 tsp. each of Kosher salt and freshly ground black pepper. Chopped parsley for garnish.
Directions:
Preheat oven to 375 degrees. In a large bowl, mix together cooked macaroni, chopped chicken, Ranch dressing, milk, cheddar cheese, Parmesan cheese, garlic powder, salt and pepper. Transfer mixture to a greased 8"X8" or a 9"X9" Pyrex baking dish. Sprinkle Panko breadcrumbs evenly on top. Bake for 20 - 25 minutes until top is brown and bubbly. Garnish with chopped parsley before serving.
